2 1/2 pound chuck roast, trimmed of all large pieces of fat

Kosher salt and fresh black pepper for seasoning the beef

1 tablespoon flour

Olive oil for browning the beef

1 1/2 cups sliced carrots

1 1/2 cups diced onion

1 cup chopped celery

1 teaspoon kosher salt

Fresh black pepper to taste

1 tablespoon chopped garlic

2 tablespoons tomato paste

3/4 cup red wine

8 cups beef broth

1 tablespoon fresh thyme, chopped

1 tablespoon Worcestershire sauce

2/3 cup pearl barley

2 tablespoons fresh chopped parsley
