AIR FRYER BANANA BREAD

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt
  • 1 cup granulated sugar
  • 2 large OR 3 medium overripe bananas (about 1 cup mashed)
  • ¼ cup unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract
  • 1 large egg
  • ½ cup pecans chopped

Instructions

    • Grease three mini loaf baking pans and set aside.
    • In a medium mixing bowl, mix together the flour, baking soda and salt, set aside.
    • In a separate large mixing bowl, mash the bananas and mix with the granulated sugar until creamy.
    • Pour the melted butter into the banana mixture and mix well. Add the egg and vanilla extract to the banana mix and mix until combined
    • Add in half of the flour mixture to the banana mixture and stir until just combined. Pour in the remaining flour mixture and stir until the batter is combined well.
    • Gently stir in the chopped pecans into the batter.
    • Preheat the air fryer to 330F.
  • While the air fryer preheats, scoop the batter into your prepared mini loaf pans, filling about halfway full. (This will make 3 loaves, if using a slightly larger pan you will want to fill the pans about ⅔ full and end up with 2 loaves).
  • Place the pans into the basket of your air fryer and bake on the air fry setting at 330 for 20-25 minutes.* (A toothpick inserted into the center of the banana bread loaf should come out clean when it’s fully done cooking).
  • When the banana bread has finished cooking, remove from the air fryer and let it cool fully in the pans before removing. Slice and serve!

Notes

  • Make sure you use overripe bananas, they have the most sweet flavor.
  • This will make 3 mini loaves, you will have to cook in 2 batches.
  • This can be baked in the oven, see my tips above.
  • You can add chopped pecans, walnuts, chocolate chips or leave plain.
  • This can be frozen, see my tips above.
  • Canola oil can be swapped for the melted butter.
  • I like to spray the pans with Baker’s Joy which is a nonstick baking spray that has flour in it.
