Key lime pie with gingersnap crust

Crust:

• 1 1/2 cups gingersnap cookie crumbs (about 30 cookies)

• 1/4 cup granulated sugar

• 5 tablespoons unsalted butter, melted

Filling:

• 1 cup key lime juice (fresh if possible)

• 2 teaspoons lime zest

• 2 (14-ounce) cans sweetened condensed milk

• 4 large egg yolks

Topping:

• 1 cup heavy cream

• 1/4 cup powdered sugar

• 1/2 teaspoon vanilla extract
