Minister’s Delight
Ingredients:
500g of assorted meats (beef, chicken, liver, etc.), chopped into bite-sized pieces
2 cups of beef or chicken stock
2 cups of palm oil
2 large onions, chopped
4 large tomatoes, chopped
3-4 scotch bonnet peppers, chopped (adjust according to your spice preference)
3 cloves of garlic, minced
1 thumb-sized piece of ginger, minced
2 tablespoons of ground crayfish
2 cups of chopped vegetables (spinach, kale, or pumpkin leaves)
Salt to taste
Seasoning cubes or powder to taste
