Cheesecake with dulce de leche and caramelized peaches

Cheesecake with dulce de leche and caramelized peaches without the need to bake:

 

INGREDIENTS

– 200 g of maría biscuits or digestive biscuits

– 100 g melted butter

– 400 g of cream cheese

– 200 g of dulce de leche

– 200 ml of whipping cream (whipping cream)

– 1 Teaspoon vanilla extract

– 3 sheets of gelatin (previously soaked in cold water)

– 2-3 ripe peaches

– 2 tablespoons of sugar

PREPARATION

1. Crush the cookies until you get fine crumbs. Mix the crumbs with the melted butter and press this mixture into the bottom of a springform pan, forming the base of the tart. Refrigerate while you prepare the filling.

2. In a large bowl, beat cream cheese until smooth and creamy. Add the dulce de leche and mix well.

3. Gently heat the whipping cream in a saucepan until hot but not simmering. Squeeze excess water from the gelatin sheets and add them to the hot cream, stirring until completely dissolved.

4. Add the cream with gelatin to the mixture of cream cheese and dulce de leche. Add the vanilla essence and mix until all the ingredients are well combined.

5. Pour the mixture over the cookie base in the mold. Smooth the top and refrigerate for at least 4 hours, or until the tart is firm.

6. For the caramelized peaches, peel the peaches and cut them into slices. In a skillet, heat the sugar until it melts and turns a golden color. Add the peach slices and cook them for a few minutes until they are caramelized.

7. Let the caramelized peaches cool, then place them on the tart before serving.
