PANCAKE ROLLS

Here’s an idea to present pancakes differently for Candlemas. I chose to fill them with Praline and homemade spread. You can of course use Nutella, salted butter caramel, speculoos dough, etc.

You can also make them in a savory version, by filling them with cheese.

I made chocolate crepes and plain crepes that I layered. I then rolled them and cut them into mini rolls. These little pancake rolls are very popular in a buffet.

For a snack, served with a scoop of vanilla ice cream, these chocolate crepe rolls are a delight!
You can also make a crepe cake by layering the crepes in a removable mold. Spread the filling of your choice between each layer.

Let it set a little in the refrigerator before unmolding. Top the cake with nutella crepes and sprinkle with nougatine for example.

How to make these chocolate rolled pancakes?
Place the flour in a bowl with the vanilla sugar, sugar and a pinch of salt.
Mix and make a well in the center.
Mix the eggs with the milk with a whisk.
Pour the milk and eggs little by little into the well while whisking.
Mix from the center outwards to avoid lumps. You should obtain a very smooth dough.
You can mix the preparation with an immersion foot if you still have lumps.
Add the hot melted butter little by little after mixing everything well.
Divide the dough into 2 equal parts.
Add the sifted cocoa to one part and mix well.
Let the dough sit for an hour. It will thicken a little.
When the dough has rested, stretch it with water to make very light pancakes.
Heat the pan and place a paper towel coated with a little oil over it.
Pour in a small ladle of batter and stir to coat the entire pan.
Pour just enough to form a thin film of batter on the pan.
Flip as soon as the pancake comes apart.
Remove when the pancake is lightly browned.
