Boiled Egg and Spring Onion Flatbreads with Yogurt Sauce

Step 1: Prepare the Flatbreads

  1. Mix the Sauce Ingredients: In a small bowl, combine the Greek yogurt, lemon juice, minced garlic, salt, and pepper. Stir until the mixture is smooth and creamy.
  2. Adjust the Flavor: Taste the sauce and adjust the seasoning as needed. If you prefer a more tangy flavor, add a bit more lemon juice. For a touch of heat, consider adding a pinch of cayenne pepper or chili flakes.
Step 3: Assemble the Flatbreads
  1. Prepare the Eggs: Boil the eggs in a pot of water for about 10 minutes until they are hard-boiled. Once cooked, drain the eggs, cool them under cold running water, and peel them. Slice the eggs into quarters.
  2. Assemble the Flatbreads: Lay the warm flatbreads on a clean surface. Arrange the sliced eggs evenly across each flatbread, then sprinkle the sliced spring onions over the top. Season with salt and pepper to taste.
  3. Drizzle with Yogurt Sauce: Spoon the yogurt sauce over the egg and spring onion mixture, allowing it to spread across the filling.
  4. Fold and Serve: Fold the flatbreads in half or roll them up to encase the filling. If desired, garnish with fresh herbs for an added burst of flavor.
