Step 3: Assemble the Flatbreads
- Prepare the Eggs: Boil the eggs in a pot of water for about 10 minutes until they are hard-boiled. Once cooked, drain the eggs, cool them under cold running water, and peel them. Slice the eggs into quarters.
- Assemble the Flatbreads: Lay the warm flatbreads on a clean surface. Arrange the sliced eggs evenly across each flatbread, then sprinkle the sliced spring onions over the top. Season with salt and pepper to taste.
- Drizzle with Yogurt Sauce: Spoon the yogurt sauce over the egg and spring onion mixture, allowing it to spread across the filling.
- Fold and Serve: Fold the flatbreads in half or roll them up to encase the filling. If desired, garnish with fresh herbs for an added burst of flavor.
