California spaghetti salad

Preheat oven 350°F (180°C). Greased 9″ * 13″ baking pan and set apart.

In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.

In a large bowl, whisk together the sugar, eggs, and oil until well blended. Adding dry ingredients to wet ingredients also stirring to combine. Add grated carrots and nuts, if using

Pour batter to prepared pan and smooth top with a spatula. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool totally.

To prepare the frosting, whisk the cream cheese and butter together until smooth. Add the confectioners’ sugar and vanilla and whisk well until combined and smooth. Spread the frosting over the cooled cake and serve.
