Melt the Base:
In a microwave-safe bowl, combine the white chocolate chips, condensed milk, and light butter. Microwave in 30-second intervals, stirring in between, until smooth and fully melted. -
Add the Crunch:
Stir in the vanilla extract, chopped pecans, and puffed rice cereal until evenly mixed. -
Spread & Swirl:
Pour the mixture into a parchment-lined tray or square pan. Drizzle the sugar-free caramel syrup over the top and use a knife or toothpick to swirl it decoratively into the fudge. -
Chill:
Place in the refrigerator and chill until firm, at least 2 hours or overnight. -
Cut & Store:
Slice into 25 pieces. Store in an airtight container in the fridge to maintain texture.
