Cheeseburger Soup

Cook the Beef and Vegetables:

In a large pot, brown the ground beef over medium heat until no longer pink. Drain and set aside.

In the same pot, add 1 tablespoon butter and sauté the onion, carrots, celery, basil, and parsley until vegetables are tender, about 10 minutes.

Add Broth and Potatoes:

Add the broth, potatoes, and cooked beef back to the pot. Bring to a boil, then reduce heat, cover, and simmer for 10-12 minutes or until potatoes are tender.

Prepare Roux:

In a small skillet, melt the remaining butter and add the flour. Cook and stir for 3-5 minutes or until bubbly. Add to the soup and bring to a boil. Cook and stir for 2 minutes; reduce heat to low.

Add Cheese and Milk:

Stir in the cheese, milk, salt, and pepper. Cook and stir until cheese melts. Remove from heat.

Finish with Sour Cream:

Just before serving, stir in the sour cream until blended.

Serve:

Serve hot, garnished with additional cheese or sour cream if desired.
