Cherry Pie Cookies

1. Preheat the oven to 350°F. Line a cookie sheet with parchment paper.

2. Allow the pie crusts to warm up a bit for easier handling. Sprinkle some flour on your work surface and gently roll out the crusts.

3. Chop the cherry pie filling into smaller pieces and spread it over one of the crusts.

4. Cut the other crust into 1/2″ strips or use cookie cutters to make decorative shapes.

5. Arrange the strips or shapes over the filling to create a lattice or decorative top.

6. Use a small round cutter or mason jar lid to cut out circles from the assembled crusts and transfer them to the prepared baking sheet.

7. Beat the egg until well blended, then brush the tops of the cookies with the egg wash. Sprinkle with sparkling sugar if desired.

8. Bake for 20-25 minutes or until the cookies turn golden brown.
