Ingredients:
2 tablespoons olive oil
1 medium onion, chopped
3 cloves garlic, minced
2 medium carrots, peeled and diced
2 celery stalks, diced
4 medium potatoes, peeled and cubed
4 cups chicken broth
2 cups cooked chicken, shredded
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions:
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and minced garlic and sauté for 2-3 minutes until the onion becomes translucent.
Add the diced carrots and celery to the pot and cook for an additional 3-4 minutes until the vegetables start to soften.
Add the cubed potatoes, chicken broth, shredded chicken, dried thyme, and dried rosemary to the pot. Stir well to combine.
Bring the soup to a boil, then reduce the heat to low and simmer uncovered for about 15-20 minutes, or until the potatoes are tender and cooked through.
