Ingredients
2 whole eggs
100 g of flour
100g potato starch
125 grams of granulated sugar
75g corn oil
75 g of citrus juice (1/2 lemon, 2 mandarins, 1 orange)
1/2 teaspoon baking powder
Grated citrus zest
Icing
50 grams of powdered sugar
Three tablespoons of citrus juice
Preparation
Beat the eggs and add the sugar. Then add the oil, citrus juice, yeast and zest. Finally add the flours and mix until a creamy mixture is obtained.
Pour the mixture into molds and bake at 180 degrees for 20 minutes.
Frosting: mix the sugar and mix the juice little by little.
Brush frosting over muffins and serve.
