Cream Cheese Frosting pineapple carrot bars

1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan.
2. In a bowl, mix flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
3. In another bowl, whisk together granulated sugar, brown sugar, oil, eggs, and vanilla extract until smooth.
4. Gradually add the dry ingredients to the wet ingredients until just combined.
5. Stir in grated carrots, crushed pineapple, and nuts if using.
6. Pour the batter into the prepared baking pan and spread evenly.
7. Bake for 30-35 minutes, or until a toothpick comes out clean.
8. Let the cake cool in the pan.
9. While cooling, make the frosting: beat cream cheese and butter together until smooth. Gradually add powdered sugar and vanilla, mixing until creamy.
10. Once the bars are cool, spread the cream cheese frosting on top.
11. Cut into squares and serve.
