Creamy cauliflower soup

This creamy cauliflower soup is a real revelation!

 

Ingredients for 8 servings:

– 1 head of cauliflower

– 1 grated carrot

– 65ml celery cut into cubes

– 60cl of chicken broth

– 3 tablespoons of butter

– 3 tablespoons of all-purpose flour

– Salt and pepper to taste

– 50cl of 2% milk

– 25 cl of grated cheddar cheese

– 1 teaspoon hot sauce (optional)

Preparation :

In a large pot, combine cauliflower, carrot, celery and broth.

Bring to a boil, then reduce and simmer for 15 minutes.

In another pot, melt the butter. Add the flour, salt and pepper.

Gradually add the milk. Bring to a boil over medium heat and stir for a few minutes until thickened.

Reduce and add the cheese and hot sauce.

Add to broth.

Leave to heat for a few minutes and serve.
