Creamy Salmon, Leek & Potato Traybake

1. Preheat the oven to 400°F (200°C).
2. In a baking dish, toss the potatoes and leeks with olive oil, garlic, salt, and pepper.
3. Roast for 20 minutes until potatoes start to soften.
4. In a bowl, mix heavy cream, vegetable broth, and Dijon mustard.
5. Place the salmon fillets on top of the roasted vegetables, then pour the cream mixture over the top.
6. Return the dish to the oven and bake for another 15-20 minutes until the salmon is cooked through.
7. Garnish with fresh dill before serving.

• Serve with a side of steamed greens for a complete meal.
