In a skillet, brown the ground beef over medium-high heat until it’s fully cooked. Drain any excess fat.
Add the diced potatoes, taco seasoning, and the can of diced tomatoes to the cooked ground beef. Stir to combine everything well.
Transfer the mixture to your crockpot.
Cook in your crockpot on low for 4-5 hours or until the potatoes are tender and the flavors meld together.
About 15-20 minutes before serving, sprinkle the shredded cheese on top of the casserole in the crockpot. Cover and let it melt.
