Custard-Filled Creampuffs Coated with Dark Chocolate

Creampuff Shells:
Preheat your oven to 425°F (220°C).
Boil water and butter in a medium saucepan. Stir in flour until a smooth dough forms.
Off heat, incorporate eggs one at a time.
Pipe dough onto a lined baking sheet. Bake for 20-25 minutes. Let cool.
Custard Filling:
Warm milk with vanilla bean and part of the sugar.
Whisk yolks, cornstarch, and remaining sugar. Temper with hot milk, then return all to the pan.
Cook until thick. Off heat, mix in butter. Chill.
Dark Chocolate Coating:
Simmer cream, then pour over chocolate chips, stirring until smooth.
Assemble Creampuffs:
Slice shells, fill with custard, and dip tops in chocolate.
