delicious vegetable soup

1.Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until onions are translucent.
2.Add carrots, celery, zucchini, and bell pepper. Stir and cook for 5 minutes until vegetables start to soften.
3.Add tomatoes, vegetable broth, oregano, and basil. Bring to a boil, then reduce heat and simmer for 20 minutes.
4.Season with salt and pepper. Optionally, add spinach or kale in the last few minutes of cooking.
5.Serve hot, optionally with grated Parmesan or pesto. Enjoy with crusty bread or a side salad.
