Easy Sausage Breakfast Muffins

Preheat your oven to 350°F (175°C). Grease a muffin tin with cooking spray or line it with muffin liners.

In a skillet over medium heat, cook the ground sausage, breaking it apart with a spatula, until it’s fully cooked and no longer pink. Remove from heat and drain any excess grease.

In a mixing bowl, whisk together the eggs until well beaten. Season with salt and pepper to taste.

Stir in the cooked sausage and shredded cheddar cheese into the beaten eggs until evenly combined.

Spoon the mixture into the prepared muffin tin, filling each cup about 3/4 full.

Bake in the preheated oven for 20-25 minutes, or until the muffins are set and lightly golden on top.

Remove the muffins from the oven and let them cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
