French Butter Cookies

Cream the Butter and Sugars: In a large bowl, beat the softened butter, granulated sugar, and powdered sugar together until light and fluffy, about 2-3 minutes. Add the egg yolk and vanilla extract, and mix until well combined.
Mix in the Dry Ingredients: Gradually add the flour and salt to the butter mixture, mixing until the dough just comes together. Be careful not to overmix.
Shape and Chill the Dough: Divide the dough into two equal portions. Roll each portion into a log about 1.5 inches in diameter. Wrap the logs in plastic wrap and refrigerate for at least 1 hour, or until firm.
Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Slice and Bake: Unwrap the chilled dough and slice it into 1/4-inch thick rounds. Place the cookies on the prepared baking sheet, spacing them about 1 inch apart. Brush the tops with the beaten egg, and sprinkle with granulated sugar.
Bake: Bake the cookies in the preheated oven for 12-15 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Serve: Enjoy these French butter cookies with a cup of tea or coffee. Store any leftovers in an airtight container at room temperature.
