Frito Pie

Preheat your oven to 350°F (175°C).

In a large skillet, cook the ground beef and chopped onion over medium heat until the beef is browned and the onion is softened. Drain any excess grease.

Stir in the taco seasoning mix, chili beans, and diced tomatoes and green chilies. Bring the mixture to a simmer and cook for about 5-7 minutes, stirring occasionally, until heated through and slightly thickened.

Spread half of the Fritos corn chips in the bottom of a 9×13 inch baking dish or a similar-sized oven-safe dish.

Spoon half of the beef mixture over the Fritos layer.

Sprinkle half of the shredded cheddar cheese over the beef mixture.

Repeat the layers with the remaining Fritos, beef mixture, and shredded cheddar cheese.

Cover the baking dish with aluminum foil and bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.

Remove the foil and bake for an additional 5 minutes, until the cheese is golden brown and slightly crispy.

Remove the Frito Pie from the oven and let it cool slightly before serving.
