GRANDMA’S EASY CABBAGE SOUP

1st Step:

Over medium heat, warm a drizzle of oil in a large saucepan. Add the chopped carrots, celery, and onion. They should be sautéed until they begin to mellow and become aromatic.

2nd Step:

Stir in the diced cabbage and minced garlic. Cook the cabbage for a few minutes until it begins to wilt.

3rd Step:

Pour the chicken or vegetable bouillon and diced tomatoes with their liquids into the soup pot. Stir to integrate ingredients. Drop in the bay leaf, which will impart a delicate aroma to the broth. season to flavor with salt and pepper.

4th Step:

Raising the temperature, bring the broth to a simmer. Once the broth has reached a boil, reduce the heat to medium and let it simmer gently. Allow the flavors to combine for 20 to 25 minutes.

5th Step:

As necessary, taste the soup and adjust the seasonings. At this juncture, the bay leaf can be removed.

6th Step:

Warm and aromatic cabbage soup should be ladled into containers. Garnish each serving with freshly minced parsley for a burst of color and freshness.

7th Step:

Add a dollop of sour cream to each portion before serving, if desired. The tangy creaminess of sour cream complements the soup’s robust flavors.
