Healthy soup recipe 

Add some ghee to a saucepan

Sweat the onions and garlic together until soft

Add the grated ginger and turmeric (now is time to add a little very finely chopped chili if using) and about half the finely chopped herbs, cook for a couple of minutes more

Add the chicken stock, give everything a good stir

Add the celery, butternut squash or carrots, cook 10 minutes or so until soft, then add the broken rice noodles, cook for a further couple of minutes

Add salt and ground pepper, more coriander and a good squeeze of lemon – all to taste.
