EGGPLANT:

3 Large Eggplants

Olive Oil

Coarse Salt

 

TOMATO SAUCE:

2 (400g/14oz) Tins Tomato Puree (Passata)

1 Small Onion, finely diced

4 Garlic Cloves, whole

1 Tsp Dried Oregano

1 Tsp Sugar

Fresh Basil Spring

Salt & Pepper

 

HOMEMADE BREADCRUMBS:

1 Cup Fresh Breadcrumbs

1 Tbls Olive Oil

TOPPING:

200g/7oz Shredded Mozzarella

1/2 Cup Parmesan Cheese

Fresh Basil, chopped
