Homestead Scores: A Sheet Pan Potato Delight

Preheat your oven to 425°F (220°C). Line a large sheet pan with parchment paper or aluminum foil for easy cleanup.

In a large mixing bowl, combine the diced potatoes, diced onion, minced garlic, olive oil, paprika, thyme, rosemary, salt, and pepper. Toss everything together until the potatoes and onions are evenly coated with the oil and spices.

Spread the potato mixture out in an even layer on the prepared sheet pan, making sure the potatoes are not too crowded. If they’re too close together, they won’t crisp up properly.

Place the sheet pan in the preheated oven and bake for 25-30 minutes, or until the potatoes are golden brown and crispy on the outside, and tender on the inside. Stir the potatoes halfway through the cooking time to ensure even browning.

Once the potatoes are done, remove them from the oven and let them cool slightly. Sprinkle with chopped fresh parsley and grated Parmesan cheese if desired.
