1. Preheat the Oven:
Preheat your oven to 400°F (200°C).
2. Prepare the Marinade:
In a small bowl, whisk together honey, Dijon mustard, olive oil, minced garlic, dried thyme, salt, and pepper.
3. Marinate the Pork:
Place the pork tenderloin in a baking dish or resealable plastic bag. Pour the honey mustard marinade over the pork, ensuring it’s well coated. Let it marinate for at least 30 minutes (or up to 4 hours in the fridge for more flavor).
4. Bake the Pork:
Remove the pork from the marinade (reserve the marinade) and place it in a baking dish. Bake in the preheated oven for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).
5. Glaze and Rest:
In the last 5 minutes of baking, brush the reserved marinade over the pork. Once done, remove from the oven and let the pork rest for 5-10 minutes before slicing.

Slice the pork tenderloin and drizzle with any remaining glaze. Garnish with fresh parsley.
