 Lime Bundt Cake with Cream Cheese Frosting

Preheat the Oven:

Preheat your oven to 350°F (175°C). Grease and flour a 10-inch Bundt pan thoroughly.

Prepare the Cake Batter:

In a medium bowl, whisk together the flour, baking powder, and salt.

In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

Add the eggs one at a time, beating well after each addition.

Add the lime zest, lime juice, and vanilla extract. Mix until well combined.

Gradually add the dry ingredients to the wet mixture, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined.

Bake the Cake:

Pour the batter into the prepared Bundt pan and spread it out evenly.

Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

Allow the cake to cool in the pan for about 10-15 minutes, then turn it out onto a wire rack to cool completely.

Prepare the Cream Cheese Frosting:

In a large bowl, beat the softened cream cheese and butter until smooth and creamy.

Gradually add the powdered sugar, one cup at a time, beating until smooth and creamy.

Add the lime juice and mix until well combined. If the frosting is too thick, you can add a little more lime juice or milk to reach the desired consistency.

Frost the Cake:

Once the cake is completely cooled, spread the cream cheese frosting over the top, allowing it to drip down the sides.

Garnish with additional lime zest if desired.

Serve:

Slice and serve the lime bundt cake. Enjoy it with a cup of tea or coffee for a delightful treat!
