Loaded Steak Quesadillas

1. Season the beef: Sprinkle the beef slices with 1 teaspoon of seasoned salt, Montreal steak spice, and half of the cayenne pepper.

2. Sear the beef: Heat a bit of oil in a saucepan over medium-high heat. Sear the seasoned beef slices until cooked. Remove from heat and set aside.

3. Cook the veggies: In the same saucepan, add a little more oil if needed, then toss in the chopped onions and diced bell pepper. Season with the remaining seasoned salt and cayenne pepper. Sauté the vegetables until they’re tender, stirring occasionally.

4. Assemble the quesadillas: Spray a pan with oil and heat it over medium heat. Place a tortilla on the pan and lay down 4 slices of provolone cheese. On one half of the tortilla, arrange the cooked beef, and on the other half, spread out the sautéed vegetables. Once the cheese has melted, fold the tortilla in half.

5. Cut and repeat: Slice the loaded quesadilla into four pieces. Repeat the process for the remaining tortillas and fillings.

6. Serve: Plate the quesadilla slices and serve them hot, optionally with salsa, guacamole, or sour cream on the side. Enjoy your loaded steak quesadillas!
