Low Carb Steak, Shrimp, and Veggies Skillet

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Season the thinly sliced steak with paprika, oregano, salt, and pepper.

Add the seasoned steak slices to the skillet and cook for about 2-3 minutes per side until browned. Remove the steak from the skillet and set aside.

In the same skillet, add the remaining tablespoon of olive oil.

Add minced garlic and sauté for about 30 seconds until fragrant.

Add sliced bell peppers, onion, and zucchini to the skillet. Cook for about 4-5 minutes until the vegetables are tender-crisp.

Push the vegetables to the side of the skillet and add the shrimp. Cook the shrimp for 2-3 minutes until they turn pink and opaque.

Return the cooked steak to the skillet and toss everything together to combine.

Cook for an additional minute to heat everything through.

Taste and adjust seasoning with salt and pepper if needed.

Garnish with chopped fresh parsley.
