Mango Tart

Prepare the Crust:
Preheat the oven to 350°F (175°C). In a mixing bowl, combine the flour, powdered sugar, and salt.
Add the softened butter and mix until crumbly. Stir in the egg yolk and enough cold water to form a dough.
Press the dough into the bottom and up the sides of a tart pan. Prick the bottom with a fork to prevent bubbling. Bake for 15-20 minutes, or until lightly golden. Let it cool completely.
Make the Filling:
In a large bowl, beat the heavy cream until soft peaks form. In another bowl, mix the cream cheese, granulated sugar, vanilla extract, and lemon juice until smooth.
Gently fold the whipped cream into the cream cheese mixture until well combined.
Assemble the Tart:
Spread the cream cheese filling evenly over the cooled tart crust. Top with diced mangoes, arranging them as desired.
Chill:
Refrigerate the tart for at least 1 hour to set.
Serve:
Garnish with fresh mint leaves and additional mango slices if desired. Slice and serve chilled.
