New York Cheesecake

1. Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan.
2. In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of the prepared springform pan.
3. In a large mixing bowl, beat the cream cheese and sugar until smooth and creamy.
4. Add the sour cream and vanilla extract, and mix until well combined.
5. Add the eggs, one at a time, mixing well after each addition.
6. Stir in the flour until just combined.
7. Pour the filling over the crust in the springform pan.
8. Bake in the preheated oven for 55-60 minutes, or until the center is set and the edges are lightly golden.
9. While the cheesecake is baking, prepare the topping by mixing together the sour cream, sugar, and vanilla extract.
10. Remove the cheesecake from the oven and spread the sour cream topping over the hot cheesecake.
11. Return the cheesecake to the oven and bake for an additional 5 minutes.
12. Remove the cheesecake from the oven and let it cool completely at room temperature.
13. Refrigerate the cheesecake for at least 4 hours, or overnight, before serving.
14. Once chilled, run a knife around the edges of the springform pan to release the cheesecake. Slice and serve.
