An old fashioned Carrot Cake with my coffee sounds good!
It’s quick and easy, it does take long to bake but it’s worth it!
This cake is moist from the start and needs no frosting, but it gets better the next day.
If you like, frost it with a cream cheese frosting to zhoosh it up!

Granny’s Carrot Cake
2 Cup Sugar
2 1/4 Cup Plain Flour
1 tsp Salt
1/2 tsp Baking Soda
1 1/4 tsp Cinnamon
1 1/4 tsp Nutmeg
4 Eggs (separated)
1 1/2 Cup Oil
3 Cup Grated Carrots
1 Cup Chopped Pecans
