Oven Roasted Sausage and Potatoes

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or foil for easy cleanup.

In a large bowl, combine the sliced sausage, diced potatoes, sliced onion, minced garlic, olive oil, dried thyme, dried rosemary, salt, and pepper. Toss everything together until well coated.

Spread the sausage and potato mixture evenly onto the prepared baking sheet in a single layer.

Roast in the preheated oven for about 30-35 minutes, or until the potatoes are tender and golden brown, and the sausage is cooked through, stirring halfway through cooking time to ensure even browning.
