Potato Carbonara Recipe

Peel and cube the potatoes. Cook in boiling salted water until tender.
Fry the bacon in a frying pan until golden brown.
In a bowl, beat the eggs with the crème fraîche, grated Parmesan cheese and pepper.
Drain the potatoes and add them to the frying pan with the bacon.
Pour the egg mixture over the potatoes and stir quickly so that the eggs cook and coat the potatoes.
Serve hot, sprinkled with chopped fresh parsley.
