POTATO FRITTERS RECIPE

– 2 Tbsp.Of chopped fresh parsley or chives.

– Vegetable oil, for frying.

– Sour cream or Greek yogurt, for serving (optional).

– Lemon wedges, for serving (optional).
PREPARATION:

1 – Using a box grater or a food processor with a grating attachment, grate the peeled potatoes. Place the grated potatoes in a clean dish towel and wring out any excess liquid. This phase ensures that the fried fritters will be golden.
2 – Combine the grated potatoes, chopped onion, minced garlic, carefully beaten eggs, all-purpose flour, baking powder, salt, black pepper, paprika, and cayenne pepper (if using) in a large mixing basin. Combine all the ingredients thoroughly.

3 – Fold the minced parsley or scallions into the potato mixture gently. The herbs enhance the flavor and freshness of the fritters.

4 – About 1/4 inch of vegetable oil is heated over medium heat in a large griddle or sauté pan. The oil must be sufficiently heated for heating but not burning.

5 – Using a large utensil or an ice cream scoop, place spoonfuls of the potato mixture into the heated oil and delicately flatten them to create round fritters. Fry the fritters in sections, ensuring that the pan is not overcrowded.
6 – Fry the potato fritters for approximately 3 to 4 minutes per side, or until golden and crusty. Remove the fritters from the oil with a slotted spatula and position them on a paper towel-lined plate to absorb excess oil.

7 – The potato fritters should be served while they are still heated and crisp. Optionally, you may provide sour cream or Greek yogurt for marinating, as well as lemon segments for a piquant flavor boost.
