Red Hot Cinnamon Hard Candy

Prepare Pan: Grease a 15”x10” sheet pan and line with buttered parchment paper.
Boil Mixture: In a saucepan, mix sugar, corn syrup, water, and food coloring. Heat until boiling, then simmer for 3 minutes.
Heat to 300°F: Using a candy thermometer, bring the mixture to the hard crack stage (300°F).
Add Cinnamon: Remove from heat and quickly stir in cinnamon oil.
Set & Break: Pour into the prepared pan, let cool for 1.5-2.5 hours, then dust with powdered sugar. Use a hammer to break into pieces.
