Ricotta Cheesecake

1. Preheat the oven to 350°F (175°C). Mix the graham cracker crumbs with melted butter and press into the bottom of a springform pan.
2. In a bowl, beat the ricotta cheese, sugar, lemon zest, and vanilla until smooth. Add the eggs one at a time, mixing well after each addition.
3. Pour the mixture over the crust and bake for 45-50 minutes or until the center is set.
4. Let the cheesecake cool before serving.
