Roasted Tomato Pasta with Mushrooms, Herbs & Sun-Dried Tomatoes 😍
Ingredients:
1 pound cherry tomatoes
8 ounces mushrooms, sliced
4 cloves garlic, minced
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon red pepper flakes (optional)
1/4 cup sun-dried tomatoes, chopped
8 ounces pasta (such as penne or spaghetti)
Fresh basil leaves, for garnish
Grated Parmesan cheese, for serving
Instructions:
Preheat your oven to 400°F (200°C). Place the cherry tomatoes, mushrooms, and minced garlic on a baking sheet. Drizzle with olive oil and sprinkle with salt, black pepper, dried basil, dried oregano, and red pepper flakes (if using). Toss everything together to coat the vegetables evenly.
Roast the vegetables in the preheated oven for about 20-25 minutes, or until the cherry tomatoes are blistered and the mushrooms are tender and golden brown.
While the vegetables are roasting, cook the pasta according to the package instructions until al dente. Drain the pasta and set aside.
In a large skillet, heat a tablespoon of olive oil over medium heat. Add the sun-dried tomatoes and sauté for a minute until fragrant.
