Smothered fried potatoes

I wash then peel 6 potatoes then cut into cubes. Heat a little over a 1/4 cup of oil until HOT now add your potatoes, I season with season salt, garlic and onion powder. Allow to fry for about 10 minutes, now flip and turn heat to medium high and cover. Finish cooking the potatoes until tender. I like to add sliced onions at the beginning of the cook time.
