Ingredients:
1.5 lbs Italian sausage links (sweet or hot, based on preference)
2 tablespoons olive oil
3 bell peppers (assorted colors), thinly sliced
2 large onions, thinly sliced
3 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon red pepper flakes (optional, for heat)
Salt and black pepper to taste
1 can (14 oz) diced tomatoes, undrained
1/4 cup tomato paste
1/2 cup chicken broth
Fresh parsley, chopped, for garnish
Crusty Italian rolls or cooked pasta for serving
Instructions:
Prepare the Sausages: If the sausages are in casings, remove them by slitting the casings with a knife and pushing the sausage meat out. Cut the sausage links into bite-sized pieces.
Brown the Sausages: In a large skillet or frying pan, heat olive oil over medium-high heat. Add the sausage pieces and brown them on all sides, ensuring they are cooked through. Once browned, transfer the sausages to a plate and set aside.
