Sausage & Potatoes

Preheat your oven to 400°F (200°C).

In a large mixing bowl, combine the sliced sausage rounds, diced potatoes, diced onion, minced garlic, and diced bell pepper (if using).

Drizzle the olive oil over the sausage and potato mixture. Sprinkle with paprika, dried thyme, dried oregano, salt, and pepper. Toss until everything is evenly coated.

Transfer the sausage and potato mixture to a large baking dish or sheet pan, spreading it out into an even layer.

Bake in the preheated oven for about 30-35 minutes, stirring halfway through, until the potatoes are tender and golden brown, and the sausage is cooked through.

Once done, remove from the oven and let it cool slightly. Sprinkle with chopped fresh parsley for garnish if desired.
