Shortcrust pastry with vodka and apple pie

Ingredients for vodka shortcrust pastry
360 g of T55 flour
1/2 teaspoon of salt
1 tablespoon of caster sugar
225 g of frozen unsalted butter
50 cups of iced vodka
55 g of iced water
For the apple pie
1kg to 1,200g of Granny Smith, Jonagold or Gala apples – a little sweeter –
2 tablespoons of brown sugar
1/4 teaspoon ground nutmeg
1/2 teaspoon cinnamon
juice of 1/2 lemon
1 tablespoon of cornstarch
vanilla
1 egg yolk and a little milk for gilding
Shortcrust pastry with vodka
Place the ingredients in the fridge once weighed.
Sift the flour and place it in the food processor with the sugar and salt. Press the “pulse” button once or twice.
Cut the butter into small cubes.
`Slowly, add the butter until the mixture softens
Pour in half the vodka and water and “pulse” two to 4 times.
6. Test the texture of the dough by taking a small handful in your palm and pressing it with your fingers: if the dough holds together and comes together well, you have added enough liquid. I added all of the vodka and an additional tablespoon of the remaining water.
7. Divide the dough in two, flatten it roughly between two sheets of baking paper.
8. Store in the refrigerator for at least one hour or overnight.
9. Remove the shortcrust pastry from the refrigerator and roll it out with a rolling pin to a thickness of approximately 5 to 6 mm. Diameter 2 cm larger than that of the mold
9. Butter the mold, place the dough by pressing on the sides with your fingers.
10. Pinch the edges to scalloped them then stitch the bottom. Brown the tart base with a brush and place in the fridge while you prepare the apples
Apple pie
Peel, core and thinly slice the apples using a mandolin or similar.
In a large salad bowl, add nutmeg, cinnamon and lemon juice to the apples as well as a few vanilla grains. Mix and let stand for ten minutes.
Drain the apples between your hands and empty the bottom of the salad bowl of the juice.
Sprinkle the apples with cornstarch.
After placing the shortcrust pastry at the bottom of the mold and letting it rise well up the sides, garnish with the apples.

4. Cut the remaining shortcrust pastry into strips of approximately 3 cm. Braid over the top of the apples, making sure to let them overhang the sides a little. You have to get this lovely pie. You can also simply cover the apples with the dough, making sure to cut the dough in the center to let the steam escape.
6. Bake in an oven preheated to 180°, lowering the temperature to 160° after 20 minutes of cooking. Cooking will take between 1 hour and 1 hour 30 minutes depending on the size of your oven: mine is very large so… more time than in a normal size oven. You can brown the dough after 40 minutes if you have a little browning left.
