Simple Macaroni and Cheese

 

Ingredients:

2 cups elbow macaroni

2 cups shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

3 cups whole milk

1/4 cup unsalted butter

1/4 cup all-purpose flour

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon paprika (optional)

1/4 teaspoon garlic powder (optional)

Directions:

Cook the elbow macaroni according to the package instructions until al dente. Drain and set aside.

In a large saucepan, melt the unsalted butter over medium heat.

Stir in the all-purpose flour to create a smooth paste. Cook and stir for about 2 minutes until the mixture is lightly golden.

Gradually whisk in the whole milk, ensuring there are no lumps. Continue cooking and stirring until the mixture thickens, about 5-7 minutes.

Reduce the heat to low, then add the shredded sharp cheddar cheese and grated Parmesan cheese. Stir until the cheeses are fully melted and the sauce is smooth.

Season the cheese sauce with salt, black pepper, paprika (if using), and garlic powder (if using). Stir until well combined.

Add the cooked macaroni to the cheese sauce and stir until the pasta is evenly coated with the creamy cheese sauce.

Cook for an additional 2-3 minutes on low heat to heat through.
