Slow Cooker Pineapple Pork Loin

Prepare the Pork: Begin by trimming the pork loin of any extra fat and season it generously with salt and pepper.
Brown the Pork: Heat the vegetable oil in a large skillet over medium-high heat. Once hot, sear the pork loin on all sides until golden brown, approximately 2-4 minutes per side.
Slow Cook the Pork: Transfer the browned pork loin to your slow cooker. Smear the minced garlic over the pork, then pour in the soy sauce and add the pineapple chunks, including the juice. Sprinkle the brown sugar evenly on top.
Cook: Cover the slow cooker and set it to cook on low for 4-6 hours if you prefer a pork loin that you can slice. For a more tender, shredded texture, cook on low for 8-10 hours, occasionally ladling the cooking juices over the pork. After shredding the pork, return it to the slow cooker and let it cook on low for an additional hour to soak up more flavor.
