Southern Fried Salmon Patties

1. Open up your can of salmon and give it a good drain. You want to get rid of as much excess liquid as possible. Dump the salmon into a mixing bowl.

2. Take a fork and start flaking the salmon into smaller pieces. You don’t want any big chunks left.

3. Now, add in your finely chopped onion, cornmeal, flour, egg, and mayo to the salmon in the bowl.

4. Grab a spoon or use your hands and mix everything together until it’s all nicely blended.

5. Time to shape your mixture into patties. Aim for about the size of a regular burger patty or a bit smaller.

6. Heat up some oil in a skillet over medium heat. Once the oil is nice and hot, carefully place your salmon patties in the skillet.

7. Let them cook until they’re golden brown on one side, then flip them over and let the other side get nice and crispy too. This should take a few minutes on each side.

8. Once they’re cooked through and crispy on the outside, take them out of the skillet and onto a plate lined with paper towels to soak up any excess oil.

9. Serve them up hot and enjoy! And remember, the mayo in these patties helps keep them moist and holds everything together, so don’t skip it!
