Strawberry Cheesecake Bars


Prepare the crust: Combine graham cracker crumbs, melted butter, and sugar. Press firmly into a lined baking pan.
Make the cheesecake: Beat cream cheese and sugar until smooth. Add flour, sour cream, heavy cream, vanilla extract, and salt. Mix well. Add eggs one at a time, mixing on low speed.
Bake the cheesecake: Pour cheesecake filling over the crust. Bake at 325°F for 35-40 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let it cool in the oven for 1 hour. Then, remove and let it cool to room temperature before refrigerating for at least 4 hours or overnight.
Make the strawberry jam: Combine strawberries, sugar, and lemon juice in a saucepan. Cook over medium heat until thickened. Remove from heat and let cool.
Assemble the bars: Cut chilled cheesecake into rectangular bars. Carve out a small strip from the center of each bar. Fill with strawberry jam. Drizzle with melted white chocolate.
