The Best Fudgy Red Velvet Brownies

Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
In a large bowl, whisk together the melted butter and sugar until well combined. Add the eggs, vanilla extract, and red food coloring, whisking until smooth.
Sift in the cocoa powder, flour, salt, and baking powder, and fold the mixture together until just combined. Do not overmix.
Pour the batter into the prepared baking pan, spreading it evenly.
In a separate bowl, beat the softened cream cheese, sugar, egg yolk, and vanilla extract until smooth.
Drop spoonfuls of the cream cheese mixture over the brownie batter. Use a knife to swirl the cream cheese mixture into the batter.
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. The center should be slightly underdone for a fudgy texture.
Allow the brownies to cool completely in the pan before lifting them out using the parchment paper. Slice and serve.
