Traditional Irish Boxty

Start by grating the raw potatoes using a box grater. Place the grated potatoes in a clean kitchen towel or cheesecloth, and squeeze out as much liquid as possible.

In a large mixing bowl, combine the grated potatoes with the mashed potatoes.

In a separate bowl, sift together the flour, baking powder, and salt. Gradually add this dry mixture to the potatoes, stirring until well combined.

Stir in the milk and melted butter or oil until the batter is smooth. If desired, add chopped fresh herbs for extra flavor.

Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.

Spoon the boxty batter onto the hot skillet, using about 1/4 cup for each pancake. Use the back of the spoon to spread the batter into a round shape.

Cook the boxty pancakes for 3-4 minutes on each side, or until golden brown and cooked through.

Once cooked, transfer the boxty pancakes to a plate and keep warm while you cook the remaining batter.

Serve the boxty hot with your choice of toppings, such as butter, sour cream, smoked salmon, or crispy bacon.
