Ingredients:

1 pound (about 450g) mushrooms, cleaned and halved or quartered depending on size
3 tablespoons balsamic vinegar
2 tablespoons soy sauce (or tamari for a gluten-free option)
3 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
Salt and black pepper to taste
Fresh parsley, chopped (for garnish)
Instructions:

1. Preheat the Oven:

Preheat your oven to 400°F (200°C).

2. Prepare the Marinade:

In a bowl, whisk together the balsamic vinegar, soy sauce, olive oil, minced garlic, dried thyme, salt, and black pepper.

3. Marinate the Mushrooms:
